


Pacamara, El Salvador
This special lot is a blend of Pacamara beans from 18 smallholder farmers in the Metapan region of El Salvador. The Cafenor mill, just north of Santa Ana, is at the heart of this coffee – a family-run operation led by Alejandro Valiente and his daughters, Monica and Valeria. Their roots in coffee stretch back to 1890, and today they not only process coffee from their own farm, Anarquía, but also support over 60 neighbouring growers.
Pacamara is a rare varietal known for its large beans and complex flavour. Many of these producers grow only small quantities, so Cafenor has combined the best of their harvests to create this well-balanced lot. Coffees are either delivered as fresh cherry or dried parchment, then processed with care at the carbon-neutral mill using raised, shaded drying beds and solar power.
This medium roast is clean, juicy, and characterful – expect notes of orange, caramel, and a tea-like body. It's great for both filter and espresso and holds up beautifully with milk.
